Khymer Kitchen

Plein, who is 22 years old, and Tevea, who is 18, are the student chefs who are responsible for preparing the food in the new kitchen at Bakong Technical College.  They are training with Mr Narong who is a local chef.  I had the opportunity of spending the morning with the student chefs and other volunteer workers learning to prepare the tasty Khmer food that the Sweat Equity would eat later  for lunch. They corrected my knife cutting technique and told me about the spices that they were using.  It was hilarious as we tried to converse in english about the recipes.  You might be tempted to try these spices with your next BBQ chicken.  We used a sauce with garlic, oyster sauce, chicken powder, pepper, crushed peanuts and honey.   Or….you might want to try PLEA , a dish with tiny pieces of “tube fish” with lemongrass, garlic , galingol and lemons.   Or… you could make a chicken stir fry with oyster sauce, pepper, onions and ginger.    All of these dishes were served with steamed rice.  Fantastic!  We all agreed that the boys did a  great job and were on their way to becoming “Master Chefs”  Eventually there will be training courses for the hotel industry at Bakong Technical College.

Hi Pat! Say hello to Chris from us at ECC. Those spices sound really good as I use most of them myself! I hope you are all well and having fun!
